PHILOSOPHY

In line with the traditional concept of Cured Meats, Preserves & Tapas, Tablafina is a new proposal from the NH Hotel Group that emphasises the quality of the ingredients served. A space that opens out onto emblematic streets in major cities such as Madrid, Barcelona, Marseille and Milan.

A new kind of Wine Bar, first launched to great success at the NH Nacional (Madrid) and gradually expanded to cities such as Barcelona, Marseille and Milan. Tablafina is the name of NH’s gastronomic initiative that seeks to connect with the world of traditional bars and local cuisine, something that is quintessentially Spanish and which has become a hit worldwide. A proposal that highlights the quality of the products and ingredients served.

Tablafina proposes a menu that connects with nature and with local produce. An idea that was first set out as a pilot project, with a view to extending it subsequently to other hotels in the Group throughout the world.

A proposal that has been guided by some supremely eminent professionals. David Robledo, named the Best Sommelier at the National Gastronomy Awards of 2014, offers a selection of wines at our Santceloni restaurant that has been recognised as one of the finest in the world by Wine Spectator in its “Restaurant Wine List Awards”, with more than 1200 references on the menu.

Discretion, cordiality, perfect mastery of service and an encyclopaedic knowledge of cheese have made Abel Valverde an indisputable member of the select group of Spanish maître d’s who could literally write the book for this profession.

The NH Hotel Group has positioned itself as the ultimate gastronomic hotel chain in Spain with the highest number of Michelin stars. In total, the company has 6 Michelin stars nationally, and 10 Soles Repsol divided between Madrid, Barcelona and Castellón.

Eminent national chefs such as David Muñoz, Óscar Velasco, Paco Roncero, Marcos Morán, Luis Bartolomé, Esteban González, Ángel Aylagas, Miguel Barrera, Andrea Tumbarello, Enrique Martínez, among others.

Internationally, it boasts a further 5 Michelin stars, making a grand total of 12 stars with renowned international chefs such as Americo Ho Cham, Grant Achatz, Jacob Jan Boerma or Chris Naylor, among others.
